Sweet Potato Hash
So...we have a recipe section?
This is just one of those things that came to me. There was no specific recipe in mind, The Cooking Voice came to me and said "make this," and so I did. I don't follow measurements. And I don't believe in boring you with stories about cooking, either.
1 Whole Onion, diced
Leftover Collard Greens
Sweet Potatoes, cubed and boiled
*You can use vegan sausage crumbles if it strikes your fancy. It's your food, I don't care.
Salt and Pepper to Taste
Optional: Red Pepper Flakes, Parsley, Paprika
Active Cooking Time:
Dice the onion, and cook slowly until soft. At the same time:
Dice up one sweet potato, and boil until soft. Drain. Pat dry.
Put in your (vegan) sausage crumbles, as much as you want. Brown.
Squeeze out the liquid in the leftover collards. Canned collards will also do nicely, here. Toss those into the pan.
Throw in your drained sweet potatoes. Add seasonings to taste. Enjoy!
